Interham procurará la promoción internacional del jamón

El sector jamonero español ha dado un paso decisivo hacia el futuro con la creación y presentación oficial del Instituto Internacional del Jamón (Interham), celebrada en la sede del Ministerio de Agricultura, Pesca y Alimentación. El acto reunió a representantes institucionales, científicos y líderes empresariales, marcando el nacimiento de una entidad que nace con la vocación de promover el conocimiento sobre el producto, promocionarlo en terceros mercados y fomentar la formación de los operadores, entre otros, con la organización cada dos años del Congreso Mundial del Jamón.

Los promotores de esta nueva organización empresarial son la Asociación Nacional de Industrias de la Carne de España (Anice, con sede en Madrid) y la Federación Empresarial de Carnes e Industrias Cárnicas (Fecic, con sede en Barcelona). Y entre sus socios también están la Asociación Interprofesional del Cerdo Ibérico (Asici) y la Interprofesional del Porcino de Capa Blanca (Interporc), así como las empresas Incarlopsa y Grupo Salins.

Para Julio Tapiador, presidente del Congreso Mundial del Jamón, “la creación de Interham marca un punto de inflexión para el sector jamonero, siendo la herramienta que nos permitirá organizar el Congreso Mundial del Jamón cada dos años, más fuerte y con mayor proyección”. “La formación también será uno de los pilares fundamentales de Interham para acompañar a los profesionales en su evolución, ofreciéndoles espacios y recursos para aprender, crecer y mejorar”.

Hoy en día el sector cuenta con unas 700 empresas jamoneras en activo, que producen 47 millones de piezas curadas al año, de las que más de 30 millones son de capa blanca y 16,6 millones ibérico. El sector jamonero es pieza clave de la industria cárnica de nuestro país y motor económico en sí mismo, generando unos 11.200 empleos directos

Las exportaciones alcanzaron el año pasado las 70.354 toneladas (+2,6 %) y los 821 millones de euros (+9 %), con precios medios de 11,20 euros/kg en la Unión Europea y 14,02 euros/kg en países terceros. Dentro del mercado comunitario, Francia y Alemania encabezaron las compras, mientras que Austria, Portugal y Dinamarca destacaron por su notable crecimiento en valor. Fuera de la UE, Estados Unidos fue el principal destino en valor.
