Las exportaciones españolas de Jamón y Paleta curados aumentan en volumen en 2009

Las exportaciones españolas de jamón y paleta curados aumentaron, según un estudio elaborado por el Consorcio del Jamón Serrano, en volumen, en el año 2009, un 1,5%, hasta las 21.649,7 toneladas, frente a las 21.327,5 toneladas de 2008. En contraposición a este dato, las exportaciones en valor cayeron un 1,1%, hasta los 184,9 millones de euros -en el año anterior llegaron a los 187,1 millones de euros-. Esto viene a significar que el volumen se ha mantenido en niveles ligeramente superiores a los de 2008, gracias a una reducción del precio medio del 2,6% hasta los 8,54 euros/kilo.

Como dato positivo hay que tener en cuenta que en 2009 se incrementaron el número de países donde se comercializan estos productos llegando a la cifra de 92 países.

Cabe destacar que las empresas españolas han centrado sus esfuerzos en sus llamados “campamentos de invierno”, es decir, en sus mercados tradicionales de la UE27. Así, se verifica el aumento del peso de la UE27 como destino de las exportaciones españolas de jamón y paleta curados. Si en 2008 el 82,4% de las exportaciones se dirigían a la UE27, en 2009 ese porcentaje se incrementó hasta el 84,9%.

Francia, Alemania, Portugal, Bélgica e Italia continúan siendo los mercados importadores más relevantes, puesto que absorbieron el 77% de las exportaciones en volumen (algo más que en 2008, que representaban el 74,1%).

En cuanto a las exportaciones a terceros países, en general, han experimentado una evolución negativa puesto que, en 2009, sólo han representado un 15,1% de las mismas (frente al 17,6% de 2008). Así, cabe destacar la caída de Rusia (-54,1%), Noruega (-17,3%), México (-16,0%), Japón (-13,6%) y USA (-6,9%). Sin embargo, no todo es negativo, varios países han experimentado un comportamiento al laza como Venezuela (+49,9%), Brasil (+16,6%) o Argentina (+15,2%).

No hay que pasar por alto que la concentración de las exportaciones es más que manifiesta, puesto que se verifica que sólo los diez principales mercados representan el 85,8% del total exportado (en 2008, fue el 81,6%).
